As the 2006 Holiday Season gets closer, we want to bring everyone up-to-date with the Batali Family's Salumi Artisan Cured Meats. Primarily, we wish to thank our so loyal and wonderful customers for their support and purchases throughout the year as we struggled with filling your requests. From our beginning just a few years ago, we have made so many great friends in this business. You all have been a delight to work with and are the treasures of our business.

Our philosophy, which is to produce unique cured Salumi products, continues to be the driver of our business. Since our beginning we wanted to create some new directions in the meat curing business. When we began, we felt that the traditional Salami flavors, while wonderful, needed to be challenged. This certainly is not meant to be a derogatory view of the traditions of making these products. The chefs of today have been so greatly influenced by traditions and build upon them to create so many new directions in the restaurant and food scenes. We wanted to bring this approach to Salumi - to create new flavors whilst building on the traditional methods or processes. Grandma and Grandpa's great recipes and interest in food will continue to be a driver of our tradition. I am very sure all of them are excited as they view us from way up there as we develop Salumi products with 21st Century flavor combinations and the 21st century processes. This is our uniqueness of which we will always continue to explore.

Integral to this uniqueness, we are a family-owned and operated business. From the inception of Salumi we have maintained the essence of building on Family traditions. Gina Daughter and Brian Son in Law are fully integrated into the business and are now deeply involved in running the business from expansion of our curing facilities through purchasing, production, curing and distribution. This gives Salumi another 21st Century uniqueness as they will continue to improve upon these traditions within the family framework and continuing philosophy of Salumi. You will probably talk to one of the family members when you call or email or come into Salumi. We love this interchange!
